This is Susan's maid, Babe. We had a Turkish cooking lesson last Friday. She recreated some of the dishes that she made for us when we came to dinner. I went home and tried to make them but they didn't look or taste quite the same. They were good but not the same. I talked with her today and we made a few corrections. My ears and her English don't quite jive. She is actually from the Phillipines doing Turkish cooking. How fun.

These are the receipes.

SPINACH SALAD

Baby spinach chopped
cucumber cubed
red pepper
sun dried tomatoes
green onion
chopped alonds or pistachios

Everything is chopped very fine. The dressing is Balsamikil with some honey.

EGGPLANT

Peel egg plant, slice and fry crisp.
4 Tomatoes, peel and dice.
1 onion diced.
Add just a little sugar.
Cook for about 20 minutes. Pour over egg plant and bake for 20 minutes or so.
(I added some parmesean cheese...it was really good)

ROLLED CHICKEN

Slice chicken breast thin (she has the butcher do it)
Sprinkle with lemon juice and salt and pepper. Set aside.
1 package frozen spinach thawed and the liquid squeezed out
1 onion sauteed
1 package pine nuts
White cheese
salt and pepper

Add 1 spoon of the filling and roll chicken. Roll in bread crumbs and fry.

These are delicious.

I wish I had the Turkish names but her English and my Turkish didn't work well.
